“Bramborak” – Potato Pancakes
I guess everybody knows the potato pancakes. My girlfriend really loves it and when she asked me to makes some for her Sunday evening I just can’t say no. So. It’s there and I hope you will like it too.

Cook time: around 8 minutes Total Time: 45 minutes

Ingredients:
900g/2lb peeled potatoes
6 tablespoons plain flour
2 medium size onions
6 cloves garlic
3 eggs
5 tablespoons milk
1 – 2 teaspoons salt
1 teaspoon oregano
1 teaspoon crushed black pepper
2 tablespoons marjoram (can be replaced by basil)
veg oil for frying
Method how to do it:
At first, we need to grate finely peeled raw potatoes on a grater. Don´t use mashed potatoes! Put them into a large bowl. Add milk and mix softly together. It should give us some time and save potatoes from a fast oxidation to turn them into unpleasant grey. Then finely chop the onions, crush the garlic and add with other ingredients to the bowl then stir everything together.
Now prepare a large frying pan. Add 5 tablespoons (or more) of veg oil. Set the heating at a medium heat and wait until hot. When is ready add (using a ladle spoon) the mixture into hot oil, and make them flat. I prefer to make a couple of smaller potato pancakes than a large one because of the easier handling. Then fry each side for around 4 minutes until crisp and soft brown.
It´s best to serve fresh hot with some bacon or Sauerkraut and a cold beer. Some people like it with tomato ketchup and so on but it is just up to your taste.
Tip: This is just a basic recipe. If you want to experiment, you can add finely chopped bratwurst sausages, mushrooms or vegetable like red paprika and so on…
